Join us as our talented culinary team takes on the challenge to create a delicious, hyper-local meal made entirely from ingredients sourced within 150 miles of campus — the only exception is the salt.
No shortcuts, no compromises — just fresh, locally grown, harvested, milled, raised, or produced food.

Petrale sole stuffed with oyster mushroom and local halibut mousse served with pickled king maitake mushrooms a la grecque and anise hyssop and odonata blanc de blanc beurre blanc
